Makhana Mint And Lemon Flavour
Makhana, also known as fox nut or lotus seeds are a highly nutritious snack that contains good amounts of protein, iron and calcium. Simply pan-roast them for a couple of minutes and you’ll have crisp and crunchy popcorn-like snack.
They’re gluten-free, low in calories and easily customisable. Simply toss in the desired spice mix – peri peri, cajun, pink salt, Indian masala or as in this recipe, a tangy lemon and mint flavour – the options are endless!
INGREDIENTS:-
- 1 cup makhana (lotus seeds / fox nuts)
- 1 tbsp olive oil
- 1/2 cup mint leaves
- 2 tbsp lemon juice
- Salt to taste
INSTRUCTIONS:-
- Heat oil in a pan on medium- low heat.
Add the makhana and roast for 8-10 minutes or until slightly browned and crisp. Toss intermittently to evenly roast. - To make the mint seasoning, remove the stem from the leaves and wash thoroughly.
- Spread the leaves on a baking sheet and let it sun-dry for 6-7 hours or until crisp.
- To a blender, add the dried leaves and blend to a fine powder.
- Drizzle lemon juice over the makhana and sprinkle mint powder and salt. Mix well.
- Let it cool to room temperature before serving.
